In 2018 we created ‘King Street Gin’ using botanicals from Whalley Abbey and local ‘Whalley in Bloom’ gardens. It was a great success but also a one off recipe. So this Christmas we partnered up again with the fantastic people at Brindle Distillery, home of Cuckoo Gins (view the range online here…) and with head distiller Mark we have created something pretty different…
We wanted to create a gin with a genuine link to Whalley and what better way than featuring the three rivers or ‘three fishes’ the village is known for. For this Gin we collected water directly from the sources of the three rivers that meet in Whalley – The River Calder, the River Hodder and the River Ribble. This was then distilled to purify it and redistilled with botanicals that were in season and found along river banks in Lancashire – Crab apple, Wild Sorrel & Nettle seed.
Tom and some wonderfully helpful friends set off gathering the water and ingredients and handed everything over to Mark. After some tasting and careful blending the final result is King Street Gin – The Rivers Edition! The crab apple brings a wonderful freshness and bright acidity to the fore, the sorrel adds a rounded citrus mid palate and the nettle seed is the most interesting of all adding a lovely savoury almost nutty note to the finish which creates complexity and a dry savoury style to the gin.
The label is again adorned with a stunning original drawing by local artist Austin Hacking featuring Whalleys iconic arches and the River Calder.
