The intensity and aromatics of the Valpolicella are partly the result of the exact same process as the Amarone, though with a slightly shorter drying period. The rest is purely down to Dal Forno Romano’s style. The character is that of more traditional bottlings, but the smooth class and potent flavours are the product of Dal Forno Romano’s ingenuity in the winery.
